Looking for something sweet with the lovely taste of coconut? These coconut flour chocolate chip cookies are sure to hit the spot.

Ingredients:

  • 2 Tablespoons Coconut Oil
  • 3 Tablespoons Coconut Flour
  • 1-1 1/2 Tablespoons Honey or maple syrup
  • 1/2 Teaspoon Vanilla Extract Pinch of salt
  • 2 Tablespoons

Directions:

  1. Get started by preheating your oven to 365 degrees.
  2. Mix coconut flour, coconut oil, vanilla extract, honey, and salt together in a food processor or blender.
  3. Throw some chocolate chips and mix until you reach an evenly distributed chocolate chip to dough consistency.
  4. Scoop out each cookie with a rounded ½ tablespoon.
  5. Put the cookie dough lumps (try not to eat them yet!) on a parchment lined cookie sheet. You should have about 10-12 small cookies. B
  6. Bake the cookies for around 8-10 minutes until they are golden brown.
  7. Try to be patient and let the cookies cool down before removing them from the cookie sheet. If you try to take them off before they cool, they might crumble!
  8. Serve warm for optimum enjoyment!

Ingredients:

  • 3/4 cup of coconut flour
  • 6 eggs
  • 1/4 Teaspoon of sea salt
  • 1/2 Cup of coconut oil, melted
  • 1/2 Teaspoon of baking soda
  • 1/2 Cup of honey or maple syrup
  • 1 Teaspoon of vanilla extract

Directions:

  1. Get started by preheating your oven to 365 degrees.
  2. Mix all your dry ingredients together in a small bowl and set aside.
  3. Whip out a medium bowl and beat your eggs.
  4. Mix in your melted coconut oil, honey, and vanilla.
  5. Toss in your dry ingredients and mix thoroughly.
  6. Let it sit for 3-5 minutes so the coconut flour can absorb the liquid.
  7. Scoop your batter into a muffin pan (each muffin should be filled 3/4 of batter.)
  8. Take a break and let it bake (25-30 minutes.)
  9. Let your muffins cool down before serving.
  10. Enjoy :)
